I love to get recipe emails, they are always so fun to scan through the ideas. One that I love is Kraft Foods. They have the greatest, cutest ideas, including this one that I am hoping to try soon.
Mini Potato Bites Hors D'oeuvres
15 New potatoes (1-1/2 lb.)
4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, softened
2 Tbsp. Sour Cream
2 Tbsp. Grated Parmesan Cheese
4 slices Bacon, cooked, crumbled (or the real Bacon bits)
2 Tbsp. chopped fresh chives
Cook potatoes in boiling water in large saucepan 15 min. or until tender.
Meanwhile, mix cream cheese, sour cream and Parmesan. Refrigerate until ready to use.
Drain potatoes. Cool slightly. Cut in half, then cut small piece from rounded bottom of each. Place, bottom-sides down, on platter; top with cream cheese mixture, bacon and chives.
Can be served hot or cold
