The best part about blogging is making friends. And it has been a real joy to get to hang out with my new awesome friends when I have the chance. What is even better, testing out an amazing dessert recipe with my awesome friend and then blogging about it!
One of my favorite girls, whom I met at SNAP conference last year is Ruth of What’s Cooking with Ruthie. We decided to get together and make some Beautiful fall themed cookies, that I GUARANTEE you will love if you try them.
Pumpkin Spice Whoopie Pies
1 cup canned pumpkin
1/3 cup butter, softened
1/2 cup milk
1 spice cake mix
Preheat oven to 375 degrees.
Line cookie sheet with parchment paper. In a large mixing bowl combine pumpkin and butter until smooth. Add cake mix, eggs, milk and mix on low until combined and 2-3 minutes on high until cake mix is incorporated.
Now, drop mounds of batter by tablespoons on to parchment paper, approx. 3 inches apart (they will triple in size).
Bake 15 minutes until set and lightly browned.
Cool on rack, try not to eat them all before you frost them.

I made some of these and didn’t cook all the dough, I added chocolate chips then stored it in the fridge for a couple days. Then, when I wanted a hot dessert, I put about a 1/3 cup batter into a microwaveable bowl and cooked it for about 1 minute 30 seconds or until it was done(no longer shiny). It was really good!
Nutella or Cinnamon Cream Cheese Frosting
1 (8oz) package low-fat cream cheese, softened
2 Tbsp. butter, softened
1 1/2 tsp. cinnamon or 2/3 C Nutella
1 tsp. vanilla
4 C powdered sugar
Combine cream cheese and butter in a medium mixing bowl, until smooth.
Add cinnamon or nutella and vanilla mix well.
Add powdered sugar 1 C at a time, mix with each addition. Layer filling between the bottoms of two cookies. Enjoy!
