These Lemon Waffles have it all, they are super delicious and easy to make. They are rich and soft and so good they almost melt in your mouth!
- 2½ Cups all-purpose flour
- 2 Cups milk
- ¼ Cup vegetable oil
- 2 Egg yolks
- 2 Egg whites
- ½ Cup sugar
- 1 Tsp vanilla extract
- Pinch of salt
- 2 Tbsps lemon juice
- 1 Tsp baking powder
- ½ Cup lemon sliced
Preheat the waffle maker.
Blend the all-purpose flour, milk, vegetable oil, egg yolks, half the sugar, baking powder, and lemon juice.
Grease the waffle maker and pour the batter.
Cook for 4 minutes or until golden brown.
While cooking the waffles beat the egg whites with the vanilla extract, salt, and remaining sugar until stiff peaks are formed.
Serve the waffles with the meringue and lemon slices.
