Berry Fields Cake

A delicious light cake with a berry frosting and topping.

  • Cake
  • 3 Cups flour
  • 2 Tsp baking powder
  • 1 ½ Cup sugar
  • 1 Cup butter
  • 4 Eggs
  • 1 Cup water
  • 1 Tsp vanilla extract
  • For the Frosting
  • ½ Cup butter
  • ¼ Cup berry preserve
  • 2 Cups powdered sugar
  • Topping
  • 1 ¼ Cups Berries


  • Preheat the oven to 350 degrees.
  • Place all the ingredients in a bowl and mix them well until the batter gets shiny and has no lumps in it.
  • Pour the batter into a greased a cake pan.
  • Take to the oven and bake for 40 minutes or until done.
  • Meanwhile, whip up the frosting: in a bowl add the butter and berry preserve and mix for 3 minutes. Then incorporate the powdered sugar and continue mixing until fluffy.
  • Once the cake is done, remove from the oven and let it cool down for 10 minutes.
  • Remove the cake from the cake pan and let it cool for 25 minutes.
  • Serve, decorate with frosting, top with berries, and enjoy.
