Artichoke Parmesan Dip
NOT Miracle Whip
parmesan cheese plus some for topping
can chopped green chiles
can artichoke hearts
chopped (should yield about 1/2 cup)
Drain artichoke hearts and chop coarsely.
In a medium bowl, mix mayo, cheese, and chiles.
Fold in artichokes gentle so they don't fall apart.
Spread mix in an 8x11 casserole dish.
Top with remaining cheese.
Bake at 350 for 20 minutes or until lightly golden brown.
Serve hot with tortilla chips or melba toast.
This can be made ahead and kept in the fridge until you're ready to bake it.
