Ingredients

  • 3 cups chicken cooked, diced
  • 1/2 onion yellow, diced
  • 1 can cream of chicken soup see notes for substitute
  • 3/4 cup mayo
  • 1 cup cheese shredded
  • 2 cups peas and carrots
  • 12 oz egg noodles cooked and drained
  • 25 Ritz crackers or 1 cup crumbs
  • 1/4 cup butter

Instructions

  • In a mixing bowl, combine diced chicken, yellow onion, cream of chicken, mayo, shredded cheese, peas, and carrots. Mix until the ingredients are creamy and fully incorporated.
  • Gently fold in the cooked and drained egg noodles, being careful not to break them.
  • Transfer the mixture to a casserole dish, spreading it evenly.
  • Crush Ritz crackers into crumbs using a blender and spread them over the mixture.
  • Melt butter and pour it evenly over the cracker crumbs.
  • Bake the casserole at 350°F for 35-45 minutes until the crumbs are crispy and golden.
  • Allow the casserole to rest for 15 minutes before serving. Enjoy the comforting flavors!
