Herb Roasted Potatoes

These simple herb roasted potatoes are tender and crispy, infused with earthy herbs and savory Parmesan cheese. It is perfect as a side dish and for any occasion!

Ingredients

  • 2 tablespoons olive oil
  • 2 bags red potatoes mini
  • 1 tablespoon dill
  • 1 tablespoon parsley
  • 1 tablespoon basil leaves
  • 1/2 teaspoon garlic powder
  • 1/3 cup parmesan cheese grated

Instructions

  • Pour olive oil into the slow cooker and rub it well all over the inside of the pot.
  • Wash the mini red potatoes and cut them into halves before placing them in the slow cooker.
  • Top the potatoes with dill, parsley, basil leaves, and garlic powder.
  • Add another tablespoon of olive oil and toss everything together until the potatoes are evenly coated.
  • Set the slow cooker on high for 2 to 3 hours or low for 4 to 5 hours, cooking until the potatoes are tender.
  • Just before serving, sprinkle Parmesan cheese over the potatoes for an extra burst of flavor.
