Pumpkin Spice Whoopie Pies with Nutella or Cinnamon Filling

Ingredients

  • 1 cup canned pumpkin
  • 1/3 cup butter softened
  • 2 eggs
  • 1/2 cup milk
  • 1 spice cake mix

Nutella or Cinnamon Cream Cheese Frosting

  • 1 8oz package low-fat cream cheese, softened
  • 2 Tbsp. butter softened
  • 1 1/2 tsp. cinnamon or 2/3 C Nutella
  • 1 tsp. vanilla
  • 4 C powdered sugar

Instructions

  • Preheat oven to 375 degrees.
  • Line cookie sheet with parchment paper.  In a large mixing bowl combine pumpkin and butter until smooth.  Add cake mix, eggs, milk and mix on low until combined and 2-3 minutes on high until cake mix is incorporated.
  • Now, drop mounds of batter by tablespoons on to parchment paper, approx. 3 inches apart (they will triple in size).
  • Bake 15 minutes until set and lightly browned.
  • Cool on rack, try not to eat them all before you frost them.

Filling Directions:

  • Combine cream cheese and butter in a medium mixing bowl, until smooth.
  • Add cinnamon or nutella and vanilla mix well.
  • Add powdered sugar 1 C at a time, mix with each addition.  Layer filling between the bottoms of two cookies. 

Notes

I made some of these and didn’t cook all the dough, I added chocolate chips then stored it in the fridge for a couple days.  Then, when I wanted a hot dessert,  I put about a 1/3 cup batter into a microwaveable bowl and cooked it for about 1 minute 30 seconds or until it was done(no longer shiny).  It was really good!
