Waffle Iron Sugar Cookies

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 tsp salt
  • 1 cup butter softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  • In a small bowl, stir together flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla.
  • Gradually blend in the dry ingredients.
  • Using a medium sized cookie scoop, scoop out your cookies, and set on a plate.
  • Spray griddle lightly with cooking spray.
  • Set the cookies on the griddle (I did 4 at a time).
  • Press lid of griddle down onto cookies, (optional:  lift lid after 10 second or so and add colored sugar; close).  I found that about 1 minute and 30 seconds was a perfect time, but test according to the heat of your waffle iron.
  • When they are golden, but not too dark lift the lid and allow them to sit for about 20 seconds.  This cools them just enough to remove them without them falling apart.  I used two butter knifes, to lift them out (I burned myself the first go round, they are VERY hot so be careful)  Allow to cool a minute or to, but be sure to eat them hot, they are the best right then!!

Notes

** For oven baked cookies, Preheat oven to 375 degrees F, Bake 8 – 10 minutes or until golden brown. Let stand on cookie sheet two minutes before removing to cool on wire racks.
 
*** This waffle iron technique would be great with store bought cookie dough when you need a QUICK dessert!   (nestle milk chocolate chip dough cannot be beat… just saying!)
