The Best Homemade Mac and Cheese Recipe!

Hello Remodelaholic fans! I’m Jen and I blog at Bakerette.com where I share daily recipes, gardening tidbits, and a smattering of DIY projects. I’m excited to be guest posting this month for Cassity. I met Cassity at a home and garden soiree last year where she and her husband were keynote speakers and it was an instant connection. Thank you, Cassity! I’ve got the answer right here in front of you… The Ultimate Macaroni and Cheese for Grownups. But what makes this the ultimate? It’s low in fat and calories! Which means one thing…you can eat more! Ha–and it doesn’t chintz on taste! It’s amazingly flavorful. Oh and I forgot to mention it takes less than 30 minutes to make! Yep! It’s true. Scooore!

Like many of you, I grew up on Mac-and-Cheese. We’d come home from school and want a snack and mac-and-cheese seemed like the answer. We’d doctor it up with all kinds of things: Sometimes we’d mix in cooked ground hamburger; other times we’d mix in sliced hot dogs; and there were a couple of times we were scientists and added Ranch dressing or hot sauce (it wasn’t too bad!). But most often we’d eat it alone. Now I’ve grown up and, well, I will admit I’ve outgrown the boxed version of Mac-and-Cheese and have been on the manhunt for a recipe that will make my taste buds sing.

I’ve tried several different kinds of homemade mac-n-cheese recipes and none have lived up to what I would want to put on this blog. However, I came upon a Weight Watchers’ magazine and they had this recipe posted in it; but I embellished it! I have a hard time leaving recipes alone. The recipe seemed a little too blase to me, so I doctored it up with some onion and garlic, which doesn’t add many calories at all, and made it into the ultimate mac-and-cheese for grownups. And guess what? My taste buds sang. If you’re aren’t a fan of onions or garlic, it’s just as comforting without!

The Best Macaroni and Cheese Recipe For Grownups

Recipe Type: Main Dish

Cook time: 15 mins
Total time: 25 mins
Serves: 5 servings
Ingredients
  • 2 cups uncooked elbow macaroni
  • 1 1/2 cups low-fat milk
  • 3 tablespoons all-purpose flour
  • 1/2 onion, finely sliced
  • 1-2 cloves garlic, minced or pressed
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 ounces light processed cheese, cubed
  • 4 ounces low-fat cheddar cheese, shredded plus more for garnishing
Instructions
  1. Prepare a baking sheet by lining with foil. Lightly coat 5 (8 ounce) ramekins with cooking spray and set aside.
  2. Boil 2 cups of uncooked elbow macaroni per boxed instruction, drain and set aside.
  3. On medium high heat, whisk together milk and flour in a large sauce pan until well blended. Add onion, garlic, salt and pepper and while stirring constantly, cook over high heat until mixture is thickened like gravy.
  4. Remove from stove and stir in cheeses and continue stirring until cheeses are melted. Fold in pasta and evenly divide into ramekins. Garnish with approximately 1 ounce of shredded cheddar cheese. Place ramekins on prepared baking sheet and broil for 3 minutes or until cheese is melted. Serve immediately.
