Ingredients
- 2 cups whole grain wheat
- 2 Tbsp baking powder
- 1 1/2 tsp salt
- 1/2 cup sugar
- 3 Tbsp oil
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cup milk
- 1 tsp cinnamon (optional)
- 2 cups grated zucchini
- 1 cup special dark chocolate chips
Instructions
- Grate the zucchini into a large bowl.
- Add remaining ingredients and stir.
- Cook over a medium/hot griddle, sprayed with cooking spray. Flip when the edges start to look matte (lose their shine).
- Serve HOT!
Notes
You may choose to omit the chocolate chips from this recipe, but keep in mind that there is not a lot of sugar in these pancakes, and they will add the desired sweetness and balance out the zucchini flavor.
