Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • Colored sugar (optional)
  • 1 teaspoon vanilla extract
Instructions
  1. In a small bowl, stir together flour, baking soda, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in egg and vanilla.
  4. Gradually blend in the dry ingredients.
  5. Using a medium sized cookie scoop, scoop out your cookies, and set on a plate. Spray waffle iron lightly with cooking spray.
  6. Set the cookies on the waffle iron four at a time. Press lid of griddle down onto cookies.
  7. If adding optional colored sugar, lift lid after 10 seconds or so and add. Close.
  8. Cook for 60-90 seconds, depending on your waffle iron, until golden brown.
  9. Lift the lid and allow them to sit for about 20 seconds. This cools them just enough to remove them without them falling apart.
  10. Carefully lift them out and transfer to cooling rack. Allow to cool for 1-2 minutes.
  11. Serve immediately. These are best enjoyed hot.
