Try one this week, try another next week! These sweet potato recipes are so delicious and flavorful no one has to know how easy they are.
Baked Sweet Potato Con Huevo
Preheat Oven to 425°. Poke a few holes in your sweet potato(es) (I use a fork) and bake in the microwave (typically takes about 8-10 minutes depending on the strength of your microwave). Scoop about 1/2-2/3 of your sweet potato out and set aside. Crack an egg inside the remaining potato(es) and bake in the oven until the egg is cooked to your desired consistency. Add spices (I used salt, pepper, cumin, chili powder and cinnamon) and serve with remaining sweet potatoes. Done!
Roasted Sweet Potatoes with Pomegranates
Preheat Oven to 375°. Peel and cube your sweet potatoes. Toss in olive oil (just enough to coat) and sprinkle salt, pepper and curry powder. Roast in the oven for about 45 minutes or until tender (stir occasionally so they don’t burn). Toss with pomegranate seeds and either chopped parsley or chopped cilantro – whichever you prefer! Done!
Sweet Mashed Potatoes
Boil water in a pot and cook your peeled, cubed sweet potatoes in it. Once they are fully cooked remove from stove and drain. Add a banana and cinnamon and mash with a masher or mix with a mixer. Done!
