Coconut Curry Shrimp

Ingredients
  • 1 c carrots, sliced
  • 1/2 c onion, sliced
  • 1 tsp olive oil
  • 1 lb raw shrimp
  • 1 tsp curry powder
  • 1 c coconut milk
  • 1 cup water
  • 1/2 c raisins
  • salt and pepper
Instructions
  1. In a large skillet, heat olive oil to medium. Add shrimp and cook about 2 minutes on each side, seasoning with salt and pepper.
  2. Spray another large skillet with olive oil, and saute onion and carrot until crisp-tender, about 5 minutes. Season with salt and pepper.
  3. Once crisp-tender, add curry powder, coconut milk, water, and raisins to carrot skillet.
  4. Add cooked shrimp and simmer for 3-5 minutes.
  5. Serve over brown rice.
