Ingredients
- 1 c carrots, sliced
- 1/2 c onion, sliced
- 1 tsp olive oil
- 1 lb raw shrimp
- 1 tsp curry powder
- 1 c coconut milk
- 1 cup water
- 1/2 c raisins
- salt and pepper
Instructions
- In a large skillet, heat olive oil to medium. Add shrimp and cook about 2 minutes on each side, seasoning with salt and pepper.
- Spray another large skillet with olive oil, and saute onion and carrot until crisp-tender, about 5 minutes. Season with salt and pepper.
- Once crisp-tender, add curry powder, coconut milk, water, and raisins to carrot skillet.
- Add cooked shrimp and simmer for 3-5 minutes.
- Serve over brown rice.
