Marinated Tomato Toast

This recipe was inspired by a marinated tomato slice salad. Take that salad one step further, and you have marinated tomato toast, a beautiful appetizer or side dish.

Marinated Tomato Toast

Ingredients
  • 1 loaf of sourdough bread
  • 5-6 Roma tomatoes
  • 1/2 c olive oil
  • 2 Tbsp lemon juice (fresh)
  • 2-3 Tbsp Balsamic vinegar
  • 2-3 chopped green onions
  • 1-2 large fresh garlic cloves, crushed
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp salt
  • Fresh mozzarella, sliced
Instructions
  1. Slice bread and toast each piece until crusty.
  2. Scald tomatoes in a large saucepan for about 1 minute. Plunge into cold water and peel.
  3. Slice tomatoes into 1/4 inch thick slices and place close together on a large rimmed cookie sheet (or oven proof platter).
  4. In a medium bowl combine olive oil, lemon juice, vinegar, green onions, crushed garlic, parsley, basil, and salt.
  5. Drizzle marinade mixture over tomatoes, and top with fresh mozzarella slices.
  6. Broil 5 minutes or until cheese starts to bubble.
  7. Reserve drippings to dip bread.
  8. Serve.
