Marinated Tomato Toast
This recipe was inspired by a marinated tomato slice salad. Take that salad one step further, and you have marinated tomato toast, a beautiful appetizer or side dish.

- 1 loaf of sourdough bread
- 5-6 Roma tomatoes
- 1/2 c olive oil
- 2 Tbsp lemon juice (fresh)
- 2-3 Tbsp Balsamic vinegar
- 2-3 chopped green onions
- 1-2 large fresh garlic cloves, crushed
- 1 tsp dried parsley
- 1 tsp dried basil
- 1 tsp salt
- Fresh mozzarella, sliced
Instructions
- Slice bread and toast each piece until crusty.
- Scald tomatoes in a large saucepan for about 1 minute. Plunge into cold water and peel.
- Slice tomatoes into 1/4 inch thick slices and place close together on a large rimmed cookie sheet (or oven proof platter).
- In a medium bowl combine olive oil, lemon juice, vinegar, green onions, crushed garlic, parsley, basil, and salt.
- Drizzle marinade mixture over tomatoes, and top with fresh mozzarella slices.
- Broil 5 minutes or until cheese starts to bubble.
- Reserve drippings to dip bread.
- Serve.
