Microwave Pizookie Recipe!
Have you ever had a pizookie or skillet cookie?… In our college town there was this fabulous pizza place called Firehouse. Their pizza was pretty darn good, their pasta was fabulous, and if we went in it was pretty much a requirement that we had a pizookie, to wrap up the meal! Which for those of you that are unfortunate enough to never have had one, it is a “pizza cookie”, baked in a skillet, topped with ice cream, chocolate and caramel sauce then eaten while it is steaming HOT, .
And people, when you crack into the crust (crisp on the outside, soft in the center), and scoop up a bit of melting ice cream along with that hot gooey cookie, the heavens and your mouth want to sing. (but remember it is not polite to sing with your mouth full! )
Anyway… If you guys haven’t noticed I have been on a mission to create some great homemade microwave treat recipes (maybe I should be on a diet instead!)… without patting myself on the back, I must admit, I have at least two more winners for you!
And today’s microwave pizookie, will definitely be coming home with the gold metal if you try it, I promise! So for those of you that like cookies, I am afraid that I must ask you to try this one out! You will not be disappointed!
Microwave Pizookie Recipe
serves 2 (maybe 3 sorta stingy)
2 Tbsp Shortening ( I used coconut oil)
2 Tbsp Sugar
1 Tbsp Brown Sugar
1 Egg Yolk
1/4 tsp Vanilla
1/8 tsp Baking Soda
A Shake of Salt
1/4 cup + 1 Tbsp White Whole Wheat Flour
2 Tbsp +/- Chocolate Chips
In a small bowl, mix your sugar and shortening together thoroughly. Add yolk and vanilla and combine. Add salt, baking soda and flour and combine. Pour in the chocolate chips. Split between two medium sized microwaveable ceramic ramekins or a ceramic cereal bowl. Microwave for 1 minute. (Do not over do this!) Now broil it (I used a toaster oven, for 2 minutes), this is what gives it a good crust!
Serve with a scoop of ice cream or two, chocolate and caramel sauce. Enjoy!

You may have just destroyed my diet because this is one of my favorite things but I’ve never made it in the microwave before! YUM!
At least it doesn’t make left overs… which is what destroys my diet! I eat cookies until they are gone… not till I’ve had 3 or 4!

I’ve been wanting to duplicate Firehouse’s pizzookie…been eyeing the little cast iron skillets for years now. Clearly, I am not the only one dreaming of pizzookies. Thank goodness! I will be trying this…someday.

Can you believe that Firehouse actually changed the name from Pizzookie to Fh’zookie…not that it changes how deliciously evil they are. But still….
Really, why in the world did they change it? I still like pizzookie! I miss eating there… have you had their Chicken Cordon Blue pasta? I am drooling just thinking about it… and their margarita pizza. SAD! i miss Logan!
Thanks! Have you ever tired making a larger batch and freezing the rest? Cookie dough freezes well in a roll and wrapped up tight then you can just cut off a slice when you need it. I have also see a lot of other places selling pizzookies (some call it that too) and I have even seen a cast iron pizzookie pans for sell. I LOVE these!
Shalise…. This dough freezes really well ( the recipe is slightly different for a larger batch)! But I am so bad at using freezer dough, I don’t know why it just rots in my freezer. BUT I also am bad about eating ALL the cookies if I bake them, so that is why i really like the individual servings, no leftovers!
by the way, I thought is would be spelled pizzookie too, but online they mark it as a spelling error so I changed it to pizookie… either way same thing, but I guess on of the first places to call it a “pizookie” spelled it with one z…

I’ll have to try this sometime since the last time I made a Pizookie I was using the recipe based on the Pizookies you can get at BJ’s Restaurant & Brewery. Looks like this one is a lot easier. Thanks for sharing!
