- [b]For the cake:[/b]
- 1 cup water
- 1/2 cup butter
- 1/3 cup unsweetened cocoa powder
- 1 tsp vanilla
- 2 eggs
- 3/4 cup Greek yogurt (low fat or full fat)
- 1/2 cup unsweetened applesauce
- 2 cups whole wheat pastry flour
- 1 1/3 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt[br][br]
- [b]For the glaze:[/b]
- 1/2 cup butter (melted)
- 1 cup Nutella
- 1 tsp Vanilla
- 1/4 cup hot milk
Instructions
- Preheat oven to 350 degrees.
- In a microwavable bowl, heat the butter, water, and cocoa about 2 to 2 1/2 minutes till it boils.
- Add vanilla and whisk til smooth and set aside.
- In another medium bowl, whisk the egg and add the yogurt and applesauce. Stir til combined. Set aside.
- In another large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
- Add the warm chocolate mixture to flour mixture and stir to combine completely. Add the yogurt mixture and stir til combined.
- Pour batter into one ungreased 13×18 baking sheet (jelly roll pan) or two 13×9 baking sheets.
- Bake for 15-20 minutes until toothpick inserted in center comes out clean.
- When baking time is almost complete, prepare the glaze. Melt butter in medium microwavable bowl in microwave (30-40 seconds).
- Whisk the Nutella into the melted butter until smooth.
- Whisk in the hot milk (heated in microwave slightly) and vanilla until well combined.
- When cake is done, pour glaze immediately over cake and spread carefully to edges.
- Let frosted cake cool completely, cover, and store in refrigerator.
