25 Best S'more Recipes

Want to know one of my favorite things to do in the summertime?  It’s heading up to the mountains, building a campfire , and toasting marshmallows for the ultimate fireside treat: s’mores.  The simple combination that started with a roasted marshmallow sandwiched between two graham crackers and a chunk of chocolate has evolved to having practically endless variations.  (Try yours next time with Nutella instead of chocolate….it’s heavenly!)

Even better–especially if you aren’t a fan of roughing it in the great outdoors–the chocolate/graham/marshmallow combo has left the campfire and entered the kitchen.  Creative chefs have come up with their own delicious versions of this treat.  Thanks to them, you can now get your s’mores fix in a jar, with your breakfast, or straight from the freezer.  The variety is so endless that you can nosh on s’mores year round!

I thought I would share a s’more recipe that I tried this last weekend (I haven’t shared a recipe in SO long!… Well, actually I haven’t really been cooking that much lately, but we’re headed out to a camp out so…).  S’more cupcakes…  the “cake” is made from graham crackers!

Cupcake S’more Recipe

Graham Cracker Cake:

2 cups graham cracker crumbs
1 Tbsp brown sugar (optional)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup honey
1/2 cup butter (melted)
1/2 tsp vanilla
1/2 cup milk
1 cup+ mini semi sweet chocolate chips.
Mix dry ingredients together and set aside.
In another medium sized bowl combine the eggs and honey.  Add the butter and vanilla, combine, add the dry ingredients and mix thoroughly.  Add the milk, combine.  Add the chocolate chips
You can either bake it in a 9×9 pan (22 minutes) or about 15-18 cupcakes about (20 minutes).  350 degrees 

Frosting:

1/2 cup butter, room temperature

1/2 cup powder sugar

1/2 tsp vanilla
2 cups marshmallow fluff
With electric beaters or a mixer, beat the butter till creamy and smooth.  Add the sugar, and combine completely.  Add the vanilla and combine, and finally add the marshmallow fluff.  Stir til combined.  When the cupcakes are cool, you can fill them, or just put the frosting on top!  I sprinkled each cupcake with 1/4 tsp of graham cracker crumbs and some more of the mini chocolate chips

  4. All of these look so delicious! I recently brought a smore maker so I can make s’mores all year round, indoors or outdoors! I have been adding slices of fruit such as strawberries or banana to my regular s’mores and they have been a big hit even with the little ones!
