Pumpkin Steamers Recipe, 12 Days of Christmas, Day 3
Okay it is holiday season, and let’s be honest… my sweet tooth, is looking for some satisfaction! At this time of year there is NOT a shortage of treats, am I right? I know, it hurts to be right so often, ha ha.
But I have been working on some personal goals… i.e. losing weight, so I am trying to curb my sugar intake.
Well the other day I got a flyer from my favorite restaurant advertising a pumpkin steamer! It sounded so perfect, I made, uh asked my husband order it, so I could try it. Well it was good, really good! But full of sugar and not an actual drop of pumpkin in the whole thing. So I decided I needed to try and remake it, only in a way that is good for us, not sugar syrup and whole milk, but light and sugar free!
Also, I wanted it to be sorta frothy, which gave me an excuse to use my new blendtec, amazingly awesome blender! HAPPY DAY, I love my blendtec! We use it 2 times a day minimum, and I am not kidding. I think my husband loves it more than me, and if he loves it so much that he is so excited about making dinner… I will not stop him!

Sugar-Free Pumpkin Steamers Recipe
(serves 2)
2 cups low-fat milk (or milk substitute of your choice)
3/4 c. pumpkin puree (you can do a little less, but I figure, getting in a serving almost of vegetables isn’t a bad thing)
1/2 – 1 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp pure vanilla extract
Stevia drops or packet to taste(I used hazelnut flavored drops about 1/2 a droplet)
Here’s how to make it:
In a microwaveable bowl, pour in the 2 cups milk. Add the pumpkin, spices and vanilla. Sweeten with Stevia to taste. Heat in microwave for 1 1/2 minutes stir and heat til desired temperature.
To make it nice a frothy and light, pour the mixture into your blendtec. We turned it on the heat seating and let it whip for about a minute. Pour into mugs and sprinkle with a tiny bit more cinnamon if desired!

Hmm, looks delicious and right up my ally. I tried a pumpkin spice latte once, you know from Starbucks. Way to sweet for my taste, so I love this alternative, that I can make to my liking. Now, if only I had a blender like that…..
