Hi to all of Remodelaholics friends! I’m Ruthie from What’s Cooking with Ruthie.com. I love visiting with all of you each month and sharing tasty recipes!      Today… I’m sharing these mouth watering Starbucks Cranberry Bliss Bars they are so Beautiful and Delicious too!

A few weeks ago Drew and I went out to Denver CO to visit my good friend, Emily and her cute family! While Em and I were out running around the city we stopped at Starbucks… AND fell head-over-heals in LOVE with their Cranberry Bliss Bars! Holy Cow. You’re in for an amazing treat!! True to my I-need-to-duplicate-that-at-home self…. I’ve come up with a very delicious version 🙂

Starbucks Cranberry Bliss Bars (copycat) is such a wonderful combination of Cranberries and White Chocolate nestled up together to make a festive Holiday treat!

Starbucks Cranberry Bliss Bars (copycat)

Ingredients

Dough:

  • 1/2 C butter softened
  • 3 C flour
  • 1 8oz neufatchel cream cheese
  • 1 tsp baking soda
  • 1 C sugar
  • 1 tsp salt
  • 2 eggs
  • 3/4 C white chocolate chips
  • 2 tsp vanilla
  • 3/4 C dried cranberries coarsely chopped

Frosting:

  • 1 8oz cream cheese (I used neufatchel cream cheese), softened
  • 1 tsp vanilla
  • 1/2 C white chocolate chips melted
  • 2 C powdered sugar
  • Toppings:
  • 3/4 C dried cranberries coarsely chopped
  • 1/4 C white chocolate chips melted

Instructions

Cream Cheese White Chocolate Cookie Bar Dough

  • Preheat oven to 350 degrees.
  • Spray rimmed cookie sheet with cooking spray. Set aside.
  • In a large mixing bowl combine butter and neufatchel.
  • Add sugar and mix until light and fluffy (3 minutes).
  • Add 1 egg at a time; mixing well.
  • Add vanilla; mix in.
  • In a medium mixing bowl sift together flour, baking soda, salt.
  • Add dry ingredients to wet 1 C at a time; mixing just until incorporated.
  • Hand stir in 3/4 C white chocolate chips and cranberries.
  • Evenly press dough into cookie sheet. Bake 13-15 minutes or until lightly browned. Set on rack to cool completely.

White Chocolate Cream Cheese Frosting

  • In a medium mixing bowl whip cream cheese until smooth.
  • Add vanilla; mix.
  • In a small microwave bowl melt chocolate chips for 20 seconds, stir, microwave 15 seconds, stir well.
  • Add 1 C powdered sugar; mix.
  • Drizzle in melted chocolate, mix well.
  • Add remaining powdered sugar; mix until incorporated.
  • Spread over cooled cookie sheet, evenly sprinkle cranberries.
  • Melt remaining chocolate chips as directed above. Drizzle with a fork over cranberries. Let chocolate cool and Serve!

Notes

*If you want a more buttery tasting bar replace the 8 oz neufatchel cream cheese with 1/2 C butter! I like to make my recipes as skinny as possible while keeping amazing flavor but I think it would taste exactly like Starbucks with the full butter (and full calories :).
